Sea aster




The sea aster can be found in the boundary between
the high and low tide, in salt marshes and on rocks
near the sea. It is a highly specialized
plant, which tolerate the salty water. The plant
has salt glands which excrete the salt. Th young
leaves of the sea aster are becoming popular as a
vegetable. They can be eaten in salads and soupe.

Salmon soupe



1 liter bouillion
1 ounce salmon (steaks, chips)
2 ounce of sea aster leaves
2 spoons Creme freche

cook the Salmon shortly , a few minutes is
together in theboui llion. Add the cream to freche.
Add the sea aster leaves. As this soup is made very
fast it is ideal for restaurants. Do not add salt.

    Sea aster as a vegetable



    The fleshy and narrow leaves can be eaten as
    a vegetable.
    The season of sea aster ends at the start of fall.
    Most sea aster leaves are imported from France.
    Wash the leaves with fresh water, they sometimes
    contain salt cristals and then those leaves
    have a grey color, but can be eaten as well.
