Fennel or Foeniculum vulgare

A beautiful vegetable that has a fine taste and is used
in (fish)soups and salads. The taste resembles of anise.

Fennel tea


Tea from fennel seads has a soft anise taste .It is produces by
half a teaspoon of fennel seeds put in boiling water for some
minutes. It's been used traditionally to boost mothers' milk
production and promote menstruation. But it also give a baby
relieve if it has bowel colics. Fennel seads contain a substance
that has the properties of oestrogen, so pregnant women
should avoid larger amounts of this herb.


Recipe with Fennel





Traditional fennel is used as a vegetable in soups, often
together with fish.

A basis recipe for fennelsoup:
2 liter soup, 4 persons:
2 fennel bulbs (chopped)
1 large carrot (chopped)
clove garlic (crushed)
Boil the fennel and carrot and garlic for two hours in
2 liter of water.
add (optional)and boil for 10 minutes:
2 potato's (chpped) or 2 spoons of floor or
fish, like kabeljauw .
serve with chopped chive.

    Fennel or Foeniculum vulgare grows wild in Europe, and is cultivated
    as a vegetable. Fennel is a perennial herb, it has nice umbrella-like
    clusters of small yellow flowers and feathery leaves.
    Its seeds are used in tea and for home canning in mason jars.
    In home canning the umbiliform flower with seeds are used.
